more cheap and easy white trash carbs

My brain has pretty much used up all of it's concentration powers today (and I don't posess a lot of that stuff) after a very intense job interview process that I was part of this morning.
There may be changes on the horizon, here's hoping! But also a sinking feeling I may well have totally bombed....guh! We shall see in the next few weeks.

Coming home today after the interview I felt mentally drained; but guess what? I have these children that like to eat, practically non stop, and they were even super hungrier than usual as I had thought they were having a half day at school today, (when they didn't show up home at lunch time we realised it is NEXT week that is a half day), so they had to make do with a smaller lunch than usual.

I broke out my friend Claire's easy as Sugar bun recipe, used perfectly for filling up on no mental energy days like these.

It's like scones, but tastier (to me, none of that unpleasant starch/baking powder taste)



2 cups of flour
125 gms butter
2 tsp baking powder
3/4 sugar
1 egg (beat it up and make up to 3/4 with water)

and that's it.

cheap as.

Make into little cake mounds and bake in 200 degree oven for about 10 minutes or so..
This may not be exactly claire's recipe as hers turn out huge and super amazing, but she is New Zealands Master chef in the making, so I don't bother to compare.

They are also awesome for freezing and popping into the lunch box on those days when you forget to buy or make bread etc.. ahem
