Bake or Starve...

Owning half a sports team of children that all go to school requires a LOT of lunch foods.
Since pre packaged foods seem to only last us approximately 1 and a half days it's been baking season again.
Actually baking seems to only last 1 and a half days too usually, so we go for cheap and cheerful.Tummy filling and not fancy.

Here's what my kids have been chowing down:




 
This picture is of some yummy shortbread we whipped up last week. Half got quickly devoured and the rest was taken as a home made baking offering to Tween's School camp. Don't talk to me about the picture size.




The kids have a new found love of thick warm carbs in the form of  scones. We've had many batches consumed since the beginning of the school term.
They're pretty easy to make:

Flour
Butter
Milk
Baking powder

That's it.

I'm actually not much of a fan of the scone. Too bland for me. The starch overload leaves a bitter taste in my mouth for ages (anyone else get that?) But I do love that my kids can cheaply and relatively quickly be filled with them.

Today I made ANZAC biscuits with a twist.
Well not really.
I added Crasins to them. And they taste really good.




 They look a little more like rock cakes than biscuits. But don't judge by looks alone. They are yummy.

And easy.
My favourite way.

Chuck together
1/2 cup of flour
2/3 cup of coconut
1/2 cup of sugar
3/4 cup of rolled oats
lots of Crasins (a handful or so)

mix it with a fork or stick. whatever.

In another pot add 50grms of butter and some golden syrup (about 1 tablespoon but I did my best Jamie Oliver impression with this measurement).

While that's melting together and not burning (important)

Mix up 1/2 teaspoon of baking soda with some boiling water from the jug. It froths real quick so use a bigger container than the 1/4 cup measurer  like I did (this equals boiling frothy overflow...) If you used something too small start over, like I had too.

Now mix the frothy stuff with the butter and golden syrup mix. Then add it to the bowl with the dry ingredients.

Get your 6 year old to roll out into balls while you cook sausages for dinner and make a quick salad.

Flatten with a fork.
cook in oven for 15 minutes 180 degrees.
Easy as pie. Or easier even.

I have a hankering for some good relish so I'm cooking up these cheap as Tuesday beasts tomorrow with a whole lot of other tasty treats.
